White truffle

The White truffle (Tuber magnatum pico) is the largest and the most precious sort of truffles. Its colour ranges from yellow-brown to green or grey-green. Its flavour is very intense and stronger than in other types of truffles, and depends on the plant with which it lives in symbiosis. It is harvested from October to the end of December, when it can be bought fresh. The most famous habitats are around the village of Livade, more precisely in the Motovun forest and the river Mirna valley. Special climate conditions, quality soil and certain plants with which it lives in symbiosis are needed for its growth. It grows under the ground and there is no visible stalk on the surface. It is excavated from the depth of 10-15 cm, with the help of specially trained dogs. The size of the white truffle varies from the size of a cherry to the size of an apple.
