Il tartufo era conosciuto e apprezzato nel Mediteranno già dall’antichità. Ne esistono diversi tipi, però solamente alcuni sono veramente buoni, ricercati e venduti sul mercato. Si tratta di un fungo sotterraneo, un tubero che vive in simbiosi determinate piante, come la quercia, il faggio, il pioppo, il salice, l’olmo...  Il suo apparato vegetativo è costituito da una densa rete di filamenti, miceli. Sotto la scorza rugosa e irregolare si nasconde la polpa del tartufo.
